Equality Cup

This is one of the Bigest event i never want to miss in Gaborone,Botswana, it hapens annually,and this year it is titled Equality cup 3.0 as it is its 3rd year.This soccer tournaments aims to bring together all local brands and have them compete in a mixed gender tournament where only the females are allowed to score. so it is my second year there.

And i would like to congradulate MONKEY CLASS for holding the title this year as they are the winners,shame i do not have their pictures, honesty didnt think they would win*kidding*am just jealous my team didnt win and am not going to say its name…untill next year Equality cup ciao…

I said am learning how to cook and practising for my future husband and am compiling a family recipe book now,i came across this interesting dish in and first thing in the morning tomorow am going to buy the ingredients to try it out…wish me luck…

Bo Kho Vietnamese Beef Stew


2 lbs beef shank, cut into 1.5 inch cubes
1/2 knob of ginger, thinly sliced
2 beef tendon strips or about 1/2 lb
1 stalk of lemongrass (white end bruised and slice into 4-5 inch stalk and tie together)
2 bay leaves
3-4 star anise seeds, (toasted optional)
32 oz of beef broth
4 medium sized carrots
2 tbs annato seed oil (see cooks note)

1 tbs diced shallots
1 tbs minced garlic
1 tbs paprika
1 tbs minced lemongrass
1/2 tbs fish sauce
1/2 ts red chili powder
1/4 ts cinnamon
1/4 ts clove powder
1/4 ts anise powder
1 ts ground pepper
1 ts sugar

Toasted French baguettes
Fresh Basil
Pickled Onions
lime/lemon wedges
Diced cilantro and green onions
Sliced jalapenos
Rice noodles


In large mixing bowl, combine the beef shank with the spice marinade for at least 2 hours.

Saute the beef with 1 tbs of annato seed oil until browned and seared under medium high heat. Transfer this into the slow cooker. Add the beef tendons, stalk of lemonsgrass, star anise seeds, bay leaves, and beef broth. You may need to add more broth or water to just cover and submerge the beef.

Set slow cooker to lowest possible setting and allow to cook covered for overnight or about 8 hours. About 1 hour before it’s done, add the carrots. Just before serving add another 1 tbs of annato seed oil to the broth for a great red color. Make final adjustment and season to taste.

Cooks Notes:
You can also boil the tendon separately ahead of time on constant high boil for about 2 hours or until tender, then cut and add to the bo kho just before it’s done.

If you don’t have a slow cooker, simmer in big covered pot until beef is tender about 4 hrs.

To make annatto seed oil, heat 2 tbs of olive with 1/2 of annato seeds. The oil will be steeped with a red color. Do not allow oil to boil, when the color is steeped red, turn of heat and drain the seeds.
…shoooo…sounds like a mission and i think il need to be wished luck….but am not giving up..

Be Better Not Bitter

I looked and looked all around, my treasures from God could not be found. I looked under the bed, and on the ground, still my treasures could not be found.I looked in the garden and under the stairs, to my surprise there was nothing  there. I became upset and began to pray. I ask my Heavenly Father to help me find my way. I listened for the still voice but could not hear a sound. I took a step forward and look up to the hills where my help cometh from, and to my surprise the still voice was near.

I could hear Him, so loud and clear. My child keeps climbing the steps one by one, it is the only way to the begotten son. Your treasures are  not here on earth, but awaits you in Heaven. Don’t be deceived my the earthly things that come your way. You know my daughter that I am the only…

As you all know am a spiritual person,i have realised there are some things that i desperately need my God to help me with ASAP,So i have to take on Ester3*A fasting of 3 days*,a dry one for that matter where i dont take food nor drinks nor water,i just go dry by the day.Biblically, fasting is not only staying away from food and drinks but also abstaining from sex too to  focus on a period of spiritual growth.It is simply denying something of the flesh to glorify God, enhance our spirit, and go deeper in our prayer life.Believe me fasting has the fasterst inpact ever,you just live by the word and you trust too much into GOD for that period for HIM to help you not get tempted and i love GOD because you cannont cheat HIM.So today is my first day i will end my fasting on sunday.Please do not offer me food,do not buy me food,do not ask me out this weekend am on a date with GOD.

Let me explain futher more,Christian fasting isn’t some kind of a “work” that’s commanded by Christ or required by Scripture but recommended as a part of one’s spiritual growth.It is even written in the bible,like people in the bible used to fast and can you believe am only taking 3 days only and Jesus took 40 days and 40 nights and in today’s generation there is this very powerful pastor in Nigeria*a country in Africa*who took 40 days and 40 nights and this lead him to a super breakthrough and he managed to start a powerful ministry that is even in most countries world wide. Fasting and prayer are often linked together,while fasting you must pray more than you always do,allow yourself to be led by the Holyspirit. Too often, the focus of fasting is on the lack of food. However, the purpose of fasting is to take our eyes off the things of this world and instead focus on God. Fasting is a way to demonstrate to God and to ourselves that we are serious about our relationship with Him. Although fasting in Scripture is almost always a fasting from food, there are other ways to fast. Anything you can temporarily give up in order to better focus on God can be considered a fast. Fasting is not intended to punish our flesh, but to focus on God.

With today’s generation obsessed with slim bodies,i say this to them,Fasting should not be considered a “dieting method” either. We shouldn’t fast to lose weight, but rather to gain deeper fellowship with God.For some people it may be impossible to fast from food (eg.diabetic people), but everyone can temporarily give up something in order to focus on God. Even unplugging the television/stop social networking for a period of time can be an effective fast,so happy fasting to me i lean on MYGOD for this period.:)
